When generating a scanner profile for an Epson 4490 with the IT8 target:

If color management is all about using a consistent workflow, then something about profile generation doesn't make sense to me.  If I adjust the settings to get a more evenly distributed histogram and reducing clipping, don't I need to be making these same adjustments when I am scanning photos and using the resultant .icc profile?

I would think so.  Save whatever settings (in the Epson scanner interface) you're using to scan the target and recall those settings, along with the icc profile, when scanning photos.
