I am spending a lot of time configuring ultimate, including the UI and configuring Paper specific printer setups for both my printers.  Is there a quick and easy way to back everything up?  If not, are there instructions on what I need to manually backup?

Simply set up everything so you are ready to print and then SAVE the entire setup under SAVE and the P button for printer.
Give it an applicable name, and RECALL it whenever you want to use that paper and setup again.

Thanks. However, what I am trying to understand is how I can back everything up so that if my PC crashes or I have some other catastrophic issue,
I can reinstall on a new PC and be up and running super fast.  Is there an easy way to do that? Or at least instructions on what files to backup and where they are located?

What you need is back up software and separate hard drives(s) to back up to.
Fred and I use Easus Todo software: -

I use the Home edition, I think Fred has the Workstation edition.
I have a set schedule which backs up my SSD C-drive and Data D-drive in various combinations every day. There's daily & weekly schedules to different HDD's. Each new backup overwrites the old one and there's always one that's a month old.

The Program data folder can be saved from within QU by using Utilities - Migrate/Copy Application Data ..
At the end of the copy process it asks if you want to use the new location or leave it as a backup.

I would ask, why backup only QU in case there's a serious crash or HDD failure? With backup software used regularly, everything is taken care of.
