You will not know unless you print.  That driver preview only serves to give you a general idea of what is being printed.  You cannot judge color from that preview because the driver doesn't color manage previews.

Your screenshot link doesn't work.  It isn't complicated: select three thumbnails and click the 8x10 size.  That's it.  Some people expect it to be orders of magnitude more complicated (like Lightroom) but it just isn't.  There is no need to create "cells" or predefine your layout or page: just click on what you want and click a size (any size as you go) and Qimage will lay them out automatically.

If you get 7.5 instead of 8 inches on an 8x10, you have changed the crop to be off and no, that is not the default: you changed it.  See attached: click the circled button to turn auto cropping on.  If it is off, it won't crop and the size (one side) will be dictated by the aspect ratio of your image(s).

As to 24x10, like any software, you define the size of your page via the printer driver.  If you choose 24x10, you likely won't get 24x10 printable area unless you use borderless.  That's just how printer drivers work and you need to have some knowledge of how to use your driver particularly if you are using a wide format roll printer.  In Qimage, all you have to do is look above the preview page on the live view: the printable area (largest size possible) is listed there.  You can adjust the chosen page size (on Qimage's main window or the driver) if needed to get the printable area you require.

To put it simply, no, Qimage will not allow you to distort an image so if you have a 10x7.5 aspect ratio image, you cannot print it at 10x8 without cropping.  To do so will ruin the image.

Have you watched any of the help videos?  The Getting Started video?  You should probably also familiarize yourself with your printer driver and how it works, the ups and downs of using borderless mode, etc.

I've attached the live view from an Epson 9890 running a 24 inch roll.  As you can see, I've set the custom size to 24x10 and if I activate borderless mode I can get three 8x10's across the page.  But this is where a little knowledge of your printer and driver can go a long way: this is not advised!  If you try to print three 8x10 prints across a 24 inch roll with expansion on, what you'll find is that the two prints on the outside edges of the paper may be slightly less than 8 inches across due to the expansion printing part of the print off the page and the one in the middle may be slightly larger than 8x10 due to the driver's expansion for borderless mode.  And if you set the driver to "retain size" instead, that won't expand prints but now you have zero tolerance/slack and what will happen is that one of the prints (for example the one on the left) will have a small sliver of white at the edge of the paper and the one on the opposite edge will be slightly off the page making it a little under 8 inches wide due to the fact that the paper loading and feeding mechanism is never going to be 100% accurate.  And obviously when trying to get three 8x10 prints across a 24 inch roll, your printer has to be 100% perfect... and you are asking it to do the impossible else you end up with surprises when you cut your 8x10's from the page.

You really can't win with trying to print three 8x10's on a 24 inch roll as no printer is going to be perfectly accurate when aligning and feeding the paper.  You're better off putting two 10x8's across and using an extra 6 inches of roll to get three perfectly sized 8x10 prints.
