Is there a way to save "custom print" settings ... and have them show up in the list ?
For example I like to print my 5 x 7 prints at 5.125 and 7.125.
Same for a 4 x 6 at 4.125 and 6.125 (makes it easier for my rotary trimmer)

Three simple ways.
You can if you wish, add a white border of .125, and Save as a JOB.
You can use CUSTOM and set print size and save as a job.
You can right click on any size in the print size box. That gives you a complete menu of what you can do.. i.e make a new size, remove it, save is as a permanent size, etc.

I don't quite understand the purpose fully.
... to aid in trimming with rotary trimmer.
I can understand wanting an extra .125 of white space to have room for error when trimming, but making the print size larger by .125 doesn't seem to satisfy making it easier to trim.
The edge of the print is still the same.
That's why I mentioned adding a border with "+"
