When I use the Gear Icon, can I enter user-specific media settings. (See attachments 1, 2 & 3)
So for example DIN A4 Portrait (210 mm x 297 mm) and DIN A4 Landscape (297 mm x 210 mm).

But when I look into the 'Prints'-section, the above standing settings are the same, 210 x 297.

And although the dimensions entered at -> Printers and settings -> Media size are sufficient, I cannot select DIN A4 - Landscape.
What is going on and/or am I doing wrong?

The dialog you show can only be initiated by right clicking in the list of print sizes and selecting "Customize selected size".  At that point you are changing one of the print sizes in the print size list.  That has nothing to do with media size.  To change media size, you drop down the "Media Size" selection on the Printers and Settings tab.  The sizes available in that list are dictated by your printer driver.  Unless your printer driver offers an option to add custom media sizes, you cannot change them.

Same deal: you are editing a print size in the list of print sizes above that button.  Those have nothing to do with media size.  Media size (if that's what you are looking for) is on the other tab: the Printers and Settings tab.  If you are trying to edit a print size in the list and not the media size, you can click on a size in the list and then right click and select "Customize selected size".  Or... that hammer/wrench button will do it too.

But I think I see now what you are trying to do: you entered the same size twice.  210x297 and 297x210 are the same size; they are just different orientations.  The size list will always list the small size first.  This avoids confusion when dealing with (and sorting) various sizes and Qimage is going to rotate the prints to fit best on the page anyway when doing automatic layouts.  The way to change print orientation is to use the orientation (rotate) buttons below the print size.
