I try to find out the settings in Qimage ((V2020) for printing a panorama on 17 inch roll paper with the Epson P800.
I want to leave a margin of approx 2 cm on top and bottom. This means that W should be +- 380 mm and L = ?
The size of the photo is 20691 x 4982 pixels

I don't find the right settings. I also read some older related topics on this forum but I still have no clue.

Can someone please give some advice?

To be perfectly honest with you, I am a complete dummy when I have to deal in metric measurements. (mms and cms.
I have been trying to get a hold of Terry, our smart fellow.
As for the pano making, go to print Tab, then click CUSTOM and using 17" paper as your starting point, enter the short side at 17.0.
The long side will then take care of itself. Add a mat of whatever 3cms are on the sides you want
If you have patience, wait for Terry. he speaks in Centimeters. I even heard him whisper in Kilometer dialect once.

First of all I'll clarify QU terminology.
A "margin" is a page margin, the non-printable area around the edge of a page.
A BORDER is a print feature, around a printed image. Up to 2 even borders can be specified on the Print tab.
Any number of Even or Uneven borders (relevant to your request) can be specified using the Mat feature.

From the pixel size you gave, the aspect ratio is 4.15:1. Therefore the calculated length is 1578mm. However, as Fred has said you only need to specify the Short dimension using Custom size on the Print tab - Crop scissors OFF. See screen shot below of my sample. Add the image to the queue.
To add your 20mm (2cm) borders top & bottom, either in Live view or Page preview, select the image and right click to select Photo Mats in the Customise Prints section of the list.
Specify the border size with Grow Mat dotted. See second screen shot below. If you click the red V at the bottom right of the Mats window, you will see an instruction video.

The 3rd screen shot shows the result on my pano' image, in grey so you can see it. For a white border, you'll need to add Cut Marks (properties Tab) to see where to cut out from the roll.

As Terry has pointed out, There are various ways to make borders.
Just clarifying for ease of understanding, we suggest you open the Custom size button and choose "SHORT SIDE" dimension and put 16 or 17.0 inches in there. (Of course, you can use metric sizes if it is easier for you)
The reason we choose short side is because we know the limits of our short dimension; a 17" roll.
Once Qimage knows that, it calculates the horizontal pixels and how much length it will need to print them all.
OK now borders. Easy borders would be to just type in the width of your border in the boxes marked for borders. Find these at the bottom of the Print Tab screen. That assumes you want a border all the way around and all sides equal.
You want a border top and bottom only.
OK, we use mats.
Open mats, (right click of the image) and select Photo Mats Uneven borders.
Here you can select the color and the thickness of your border as you could in the easy border method, but here you can apply the  border to your choice of sides.
Last item would be to explain GROW mats. Terry mentioned it before he could realize you were unfamiliar with mats.
When you apply mats, Qimage doesn't know really what you  want yet for a final size.
Do wish/ or do you have enough unused print area to keep the print size and add the mat to that making the total print larger? In that case you do what Terry said; tick GROW.
The other selection is SHRINK. This tells QU that you want the entire print including border to be included in the print size and will shrink the picture.
For a pano print, you likely want as much picture as possible so GROW is the likely choice.
