I don't do a great deal of B&W printing and my printer has only 2 blacks, gloss & matt. I know some printers have greys to make B&W printing better. However, a good colour profile should always produce neutral greys and that' what I use. I don't think I've ever tried the grey scale setting, I must do that sometime. I keep all my B/W files as RGB, then print using my normal printer profile. Greys are colours too, and an accurate printer profile is the best way to keep them neutral (or whatever tone you want) in the finished print.
