If I decide to change the color, it doesn't change... is this a bug? I think I recall that the color change was disconnected when the thumb text color indicated whether it was untouched, has a REFINE filter, (BLUE) or an Edit filter (RED) or both; Purple. The color is controlled by the UI: it must use preset color values since the name changes color if you have filters (edit), raw refinements, or both. The color is only displayed in the font dialog because it is a standard font dialog. The "color" is ignored: it just wasn't worth the resources to have to build my own font selection dialog just to remove the "color" parameter.
