I don't see the need for new features in Ultimate for my needs. However I wonder whether there are any quality differences in printing between Ultimate and Studio?

Besides stuff like Tone Targeted sharpening etc, the new Interpolator for printing, called Fusion is included in Ultimate.

Would you say the new Interpolator(Fusion) is worth the up-grade alone?

Download the trial version and try it out. I think you will find it is worth it.
