At last - new computer. Windows 7 - the whole Megillah.
In what folder-directory do I copy all of the printer-paper profiles to.
Also, can I just copy the entire _Qimage Settings folder over, or do I have to do something special? Any other tips are appreciated.

Mazel tov on the new computer.
The actual profiles go in the same place.... C:\windows\system32\spool\drivers\color
I have a feeling that you are really referring to the printer setups that you had made, and the rest of the profiles etc.
First place to look for the default folders would be.... C:\ProgramData\ddisoftware\qimage
Then copy the contents from your old folders to the new ones,
Open Ultimate and click the Utilities drop down menu. Select Explore Qimage Application Data.

You copy from the old, paste into the new.
