Assuming I have a good custom profile, I select the media profile in QI and then head of into the Canon driver.

If you have a printer profile made for your printer and paper type and ink, it goes into Qimage where it says Printer Profile, in the Job Properties area.
The driver is usually set to OFF!
This tells the driver, hey, Qimage Ultimate has the color management, so don't change or adjust anything.
One caveat here!
The setting that is selected is determined by the person or company that created the printer profile.
99% of the profiles I encounter call for the user to set the driver to OFF, but I have seen some that say use ICM.
So read the instructions that advise you to use correct paper selection, quality setting, and also the color settings. That's where it will usually say OFF!
If you select Let Printer manage color in Qimage, Qimage Ultimate inserts a reasonably wide gamut profile into that box.
Then the user changes the driver to ICM, but since your printer has two choices, make a test 8 x 10 using both ICM selections and see which produces the nest results.
That's the best I can come up with.... What does your book say about the difference between the two ICM selections?

I was just poking around in the 8300 driver and I found OFF in a different location from the 6100. But it does show an OFF setting.
