I will be printing 8x10's on 10" paper using a Epson 7880.  How can I print these 10x8 on the 10" paper and be boarderless?

I just tried it on a 7800.
Set the width of the roll to 10.02 and the length to 8.5 (for a single) in User defined roll paper in the driver.
That gives you a printable area of 10.01 x 8.497
If you don't want any margin even on the 8: side, then reduce the 8.5 to 8.01

That works fine.
